The Best Coconut Cupcake Ever... I hope!

I have entered myself into the local Iron Cupcake Challenge in April. The theme.....coconut. I have been thinking of flavour combo after flavour combo and haven't thought of one that jumps out at me yet. *Suggestions are welcome*
So far I have only tried one recipe to test on the office coworkers. It looked great, but is it a winner? I am getting a mix of preferred coconut combos from the testers. Some want a sweet coconut, chocolate, almond, caramel kind of thing. Others think the fruity, tropical, fresh and light combo would be good. On top of the flavour, I have to figure out how to present it. Do I go whimsical or fancy? So many options, but which one is a winner?

Here is a delicious cupcake I made as a tester:


It's a vanilla cake but I replaced the milk for a coconut milk, which gave it a beautiful, moist texture, but the coconut taste was very light. I filled the center with a coconut cream filling, then topped it off with a mango buttercream (made from a fresh puree). The kiwi, strawberry, and mango on top gave it some great colour.

Personally, I loved this one. It tasted great and was so fresh and light. BUT...would the majority of the people pick it over a chocolaty combo?

I would love to get some opinions from you on this one - please let me know!

  1. When I think of coconut I think light, airy and tropical. Maybe go with the tropical all the way and have sugar sand and beach toppers.

    So far - this is what most people are saying. Love the sand on the beach idea! I can just see the little fondant flip flops.
